Do you want to go to the beach?
Do you want to play blocks?
Here’s to 2011 and
forgetting to keep track of whose turn it is to do dishes
being beaten at Old Maid by 4-year-olds
comforting the baby in the middle of the night
perfecting a batch of lava cupcakes for the 5th time
deciding to feel less overwhelmed
caring when it’s important and letting go when it’s not
spending more moments with family and friends that feel like family
Lilikoi Cream Popsicles
1 Cup lilikoi juice
1/3 Cup cream
2 Tbsp sugar
1/8 tsp vanilla
Combine all ingredients and freeze in popsicle molds.
If you have a zoku, make a filled popsicle: 1) combine the cream, sugar, and vanilla. 2)pour the lilikoi juice in molds. 3) siphon out the middle after 2-3 minutes (you’ll see a thin layer on the outside form) 4) carefully pour the sweetened cream into the middle of the popsicle mold.

Enzo's been asking me to play old maid with him all day. Instead I plopped him in front of the laptop to watch Diego so I could plop myself in front of my computer. You inspired me to be better. Starting now.

I LOVE my Zoku, and will make this recipe before 2011 is over. Promise.
I love likikoi and the popsicles sound wonderful. You are right, it is always the right time for a popsicle.
Oh boy- popsicles are going to get me to jump on a plane and come see you, my dear. the thought of eating one in the bright sunshine thrills me. also good "resolution." we could probably all stand to chill a little:)
question - do you make your own lilikoi juice - how do you get the seeds separated??
Salty: I promise all the popsicles you can eat and all the beaches you can see.
Nate and Mags: I do. You have to blend the Lilikoi up to break up the seed sacs so all the juice is released. Not too much-- the seeds will be broken into pieces but still big enough to strain. Then run the juice through a wire sieve and stir it so the juice runs through and the seeds are caught. Then you will have lilikoi concentrate to make juice to taste with water and sugar.

Shana: There is powdered non-dairy creamer... But probably I would just use soy or almond milk. Not exactly the same but probably good too!
Or coconut milk. That would probably be awesome, actually.
