I never totally got the Dorie Greenspan thing until now.
The woman is a goddess home chef. there’s a lot of food out there that’s good, but not all of it’s suitable for life. I appreciate amazing cooking that pays attention to detail while keeping my life in mind.
These gougeres were so easy and hit the note just between chewy and crispy. That pocket of air sank softly. I paired them with poached eggs and arugula.
I froze half just like she said and threw the rest in the oven. Dare I say I liked them better than cream puffs? Is that just crazy talk?
I’ll let you decide.
